Domaine Chapuis is a small, family estate producing stunning quality Bourgogne Rouge. Their 13 hectare estate is in "Les Cras" lieu dit, Mancey, which is just west of Tournous in the North-West area of Macôn.
Since 1997, domaine has been managed by François Chapuis, with his parents Jean and Josette providing extra hands.
François pampers the vines. "At the estate, we advocate reflective viticulture that takes care of the natural environment. This philosophy must go beyond basic notions of profitability." The domaine has been organically farmed for 10 years.
Ploughing, earthing and de-earthing, hoeing, and weeding on each of 20 parcels 4 times a year. This aerates the soils and mixes in decomposed cover crop and other organic matter, allowing the domaine to farm naturally with no pesticides.
In the cellar, François uses a light touch to allow the fruit to shine through. After a maceration period of 10-15 days, depending on the vintage, the wines are partially aged in barrels (about 25%).
