Château Guilhem Tournier, Bandol Rosé
Ever the purist, Guilhem Tournier makes this rosé with the utmost care. Farming is done all organically and biodynamically. At harvest, he selects bigger grapes for rosé and grapes go straight to press, no stem inclusion. Fermentation is done at low temperature to extract aromatics. Mourvèdre dominates the blend, making the wine exotic, full of Provençal herbs and rusticity. Pair with anything from the sea, as well as poultry, tuna niçoise and to drink on its own.
Varietals: Typically 90% Mourvèdre, with Cinsault and Grenache

Vinification: Hand-harvested; direct press; cool fermentation with native yeasts; Vegan
Aging: Clarified through cold stabilization and clay filter; 6-8 months in bottle
